I have a great love for breakfast and I am so happy that my two kids love it just as much. When I usually get Lil L up, the first word is EAT! So of course I usually have her breakfast waiting for her arrival. My boy isn't always as excited, he would love to just drink his chocolate milk and then around 10 eat his breakfast. But that isn't possible so he must eat first, then we get the milk. We have quite a routine around here and Calboy is usually the one determining the meal plan. His favorite choices are pancakes with chocolate chips or waffles. So we eat these very often!
I have tried MANY recipes and have found that this one really comes out the best. Now a little tip is "use your measuring cups". I have a bad habit of guesstimating as I bake and cook and for some reason with pancakes that just doesn't work well. If you add to much buttermilk the cakes will be extremely gooey, to much baking powder and you have biscuits. So break out your measuring cups and get ready to enjoy
Best Ever Buttermilk Pancakes:
Mix these ingredients in a medium sized bowl:
1c. Flour (I use 2/3c. whole wheat 1/3c white, make them a little bit healthier)
1 Tbl. Sugar
1 tsp. Baking Powder
1/2 tsp. Baking Soda
1/4 tsp. Salt
In separate cup
1 Tbl. butter melted
Add 1 egg yolk to melted butter
Add the egg white to a separate cup.
Stir the egg yolk and butter till well mixed then add to the egg white.
1C. Buttermilk
2 shots of milk (just under 1/4c.)
(if you don't have buttermilk you can add 1-2 Tbl. of lemon juice to 2%milk , and let sit for approx 5-10 minutes, but I really suggest using the real thing)
Combine the wet ingredients with the dry. It will be thick, but when you pour onto the griddle just use your spoon to thin it out some. Let cook about 2 minutes each side over medium high heat. ENJOY!!!!

Walnuts
Blueberries
(I also have mixed this and saved the leftovers in the refrigerator for up to 3 days) So you can always make more later)
